Western movies emphasize the use of the metal star on the law enforcement in a town. What the star symbolize? If I am correct there are other markings on the star or words. What is the history behind it?

The star is probably just representative of the lawman's status. All Sheriff's wore some variation of the tin star.

The star like what the thegrey1 says is the status of the lawman. Even in today's law enforcement you see the sheriff's department still using a star to represent their deputies.
